Seared Pork Patty

Step by Step Instructions

Step 1
Place flour in a big bowl. Add warm water bit by bit and knead to make smooth dough. Cover with wet towel for half an hour.

Step 2
Dice the pork belly, leek and ginger. Mix together with Chinese cooking wine, light soy sauce, dark soy sauce, oyster sauce, ground white pepper, salt, sugar and sesame oil. Marinate for 20 minutes.

Step 3
Sprinkle some flour on working table. Roll the dough into a log and divide into 4 portions. Flat 1 of 4 portions and other 3 set aside covering with towel to prevent drying.

Step 4
Place the filing in the middle of the flatten dough and leave the side with 2cm wide empty.

Step 5
Fold 3 times and seal the 2 sides.

Step 6
Heat some oil in a pan on medium heat for 10 seconds. Sear the patty with low heat until both sides are golden brown.
