Seared Lamb RibswithCouscous Salad

Couscous is one of the staple foods of the western North Africa. With the mouthwatering seared lamb ribs and the healthy couscous, this recipe is nothing but stunning.

Step by Step Instructions

Step 1
Brush 2 tbsp olive oil on the ribs and place it on the baking trayMarinate with sea salt, black pepper, rosemaryand refrigerate for 2 hours.

Step 2
In a bowl, mix the couscous with equal part of water. Microwave on high heat for 4 minutes.Dice the feta cheese and set aside.

Step 3
Add sundried tomato, diced feta cheese, chopped mint leaves, shredded lemon, 2 tbsp olive oil, sea salt, black pepper and whisk together.

Step 4
In a pan, add 1 tbsp olive oilon a high heat. Sear the lamb ribs until golden brown on both sides.

Step 5
In the same pan, add butter, rosemary, garlic and sauté until fragrant. Add the white wine, chicken broth and cook until the sauce has thickened on a high heat. Set aside.

Step 6
Place the couscous in a small bowl and flip it upside down on the plate. Place the ribs on top, sprinkle with chopped parsley and served with the sauce.
