Sea Bass with Creamed Peas, Leeks and Bacon

Step by Step Instructions

Step 1
Season the sea bass with salt and pepper. Finely chop the bacon. Wash and slice the leek. Set aside.

Step 2
In a frying pan, heat half of the butter over medium heat and sauté bacon and leek until leek is soft, about 3 minutes.

Step 3
Add in peas and cook for 1 minute. Deglaze with white wine and cook for 2 minutes.

Step 4
Add in whipping cream. Season with salt and pepper and simmer for 2 minutes until the cream is thickened and is coating the peas. Cover and set aside to keep warm.

Step 5
In a frying pan, heat some olive oil over medium high heat. Add the sea bass fillet to pan, skin side down. Cook for 3 minutes until golden brown and crispy.

Step 6
Fry for a couple more minutes until the fish is just cooked. Add in remaining butter and turn the fillet over. Spoon melted butter on the fish for several times.

Step 7
Spoon creamed pea mixture onto plate and place the fish on top. Serve immediately.
