Zest the orange and lemon

Juice the orange and lemon

Cut the scallop in pieces

Marinate the scallops with the citric juice and some olive oil. Place in the fridge for 30 minutes

Peel the last orange and cut the segment of the orange

Step 6
Chiffonade the basil and mint

Step 7
Add the orange segment and herbs together with the scallop mixture

Sprinkle with salt and chili flakes
