Scallop and Mushroom Risotto

Step 1
Soak the mushroom until soft and save the liquid

Season the scallop with salt, pepper and paprika

In a shallow pan, add some oil and butter on a medium heat. Sauté the shallot and garlic until fragrant

Add the rice and quick stir

Add the white wine to deglaze

Add the mushroom to mix together

Slowly add the mushroom water and a ladle of chicken broth

Cook until the rice absorb the liquid, then add another ladle

When the rice is almost absorb the liquid, add the cheese and cook until the cheese is melted and the rice is cooked

Step 10
Transfer to the serving plate

In a pan, add some oil on a medium heat and sear the scallop until golden brown on both sides

Place it over the rice
