Scallion Potato Egg Pancake

Using potato for breakfast most likely is hash brown. But you can try to make it into a potato pancake, also add flavor of the scallion and egg, then it will be healthier than the deep fried one.

Step 1
Peel and shredded the potato.

Step 2
Chop the green onion and cilantro.

Step 3
In a bowl, add the shredded potato, egg, flour, salt, chopped green onion and some water. Mix into a batter.

Step 4
In a pan, add some oil on a medium high heat. Add the batter and cook until golden brown on both sides.

Step 5
Transfer to the kitchen paper to soak up the excess grease. Cut into wedges.

Step 6
Sprinkle with cilantro and ready to serve.
