Sautéed Chicken Cartilage with Spicy Pepper

This is a popular family wine dish. Simply seasoned with spicy pepper, the crispy chicken cartilage is tasty enough.

Step by Step Instructions

Step 1
Finely chop the shallots, garlic and red bird chilies.

Step 2
Marinate the chicken cartilages with Chinese cooking wine, light soy sauce, sesame oil, sugar and white pepper for 20 minutes.

Step 3
In a bowl, whisk together the egg, tempura flour, beer and let it sit for 15 minutes.

Step 4
Dip the chicken cartilages in the batter and deep fry until golden brown. Transfer to the kitchen to soak up the excess grease.

Step 5
In a pan, add some oil on a medium heat. Sauté the shallots, garlic and red bird chilies until fragrant.

Step 6
Add the chicken cartilages, pepper salt and toss well. Sprinkle with green onion and ready to serve.
