Satay Chicken Skewer

Step 1
Slightly pound the lemongrass and galangal

Step 2
Place the lemongrass, galangal, shallot and garlic in a food processor and blend into paste

Step 3
Place the lemongrass, galangal, shallot and garlic in a food processor and blend into paste

Step 4
Transfer to the paste to the zipper bag

Step 5
Cut the chicken into 1” strip

Step 6
Add the chicken in the bag with the paste, shake well and refrigerate for 2-3 hours to marinate

Step 7
Place the chicken on the skewer and lay it on the rack over the baking tray

Step 8
Place in the oven and bake it until golden brown. Flip it over once the top is golden brown

Step 9
To prepare the peanut sauce. Place all the ingredients except lime juice in a sauce pan and whisk until combine

Step 10
Bring it to simmer on medium heat. Keep stir until it is smooth, remove from the heat and stir in the lime juice
