Salted Chicken
Recipe Details
Pair Salted chicken with fresh vegetables, refreshing and yummy.

Marinade for chicken thigh meat
Step by Step Instructions

Step 1
Cut the onion into pieces. Cut the string beans and green onion into sections. Remove the stems of Shimeji mushrooms and set aside.

Step 2
Marinate the chicken thigh meat with star anise, salt, ground white pepper, Sichuan pepper, five spice powder, rice wine and sesame oil overnight.

Step 3
In a pot, add 1000mL water, rice wine, onion, star anise, salt, green onions, ginger and bring to boil. Add chicken thigh meat and cook for 15 minutes on medium heat. Drain and shred.

Step 4
Add baby corns, string beans, Shimeji mushrooms and cook until done. Drain and let cool in ice water.

Step 5
Mix together chicken thigh meat, vegetables, julienned ginger, diced green onions, sesame oil, ground white pepper and chicken broth. Ready to serve.
