Salt baked cooking method had the consistent temperature, so the food can cook it evenly and also can keep the freshness on the food. This time by adding Sichuan pepper, peppercorn with coarse salt as the seasoning, it will bring up more fragrant from the razor clam.

Soak the razor clam in water to remove the sand

Step 2
Use a knife to open the razor clam and drain off the excess water inside the clam. Let it rest for 10 minutes, make sure all the water is drain off

Mince the garlic

Chop the green onion

In a pan on a medium heat, add the salt and cook until the salt is hot

Add the Sichuan pepper and black pepper corn and stir together

Step 7
Lay the razor clam over the salt

Sprinkle with garlic and green onion

Cover with the lid and cook it for 5 minutes, turn off the heat and let it sit for another 10 minutes or until the clam is fully cooked
