Salt and Pepper Prawns with Pineapple Salsa

Pineapple Salsa Ingredients
Step by Step Instructions

Step 1
Preheat the oven to 180ºC. Prepare pineapple salsa. Dice the pineapple and red onion

Step 2
Mix together the pineapple, red onion, lime zest, lime juice, chopped cilantro, honey, salt, black pepper and set aside

Step 3
Slice the lime. Finely chop the shallots, garlic and red bird chilies

Step 4
Clean and devein the prawns. Pat dry with Vinda Kitchen Towel

Step 5
Marinate the prawns with Chinese cooking wine, salt and white pepper for 15 minutes

Step 6
Place the prawns in the oven and bake until golden brown

Step 7
In a pan, add some oil on a medium heat. Sauté the shallots, garlic and red bird chilies until fragrant

Step 8
Add the prawns, sliced lime, pepper salt and toss well. Place it over the pineapple salsa, sprinkle with chopped green onion and cilantro. Ready to serve
