Salmon-stuffed Tomatoes

Step by Step Instructions

Step 1
Add some oil to a frying pan over medium heat. Sear the salmon fillet until it turns golden brown and is fully cooked

Step 2
Cut the cucumber in half, discard the seeds and then dice

Step 3
Put the egg yolk into a mixing bowl directly and dice the egg white

Step 4
Cut off the top of the cherry tomatoes. Scoop out the insides until they are hollow

Step 5
Place the cooked salmon in a bowl and use a fork to break the salmon into small pieces

Step 6
In the mixing bowl, add the salmon flakes, egg white dices, cucumber dices and Greek yogurt. Mix well

Step 7
Spoon the mixture into the tomatoes hollows until they are stuffed. Ready to serve
