Step 1
Julienne the ginger. Chop the red bird chilies, green onion and leek.

Step 2
In a pot, add some water, leek, ginger and chicken leg. Cook for 20-25 minutes and cut into pieces. Transfer to a plate.

Step 3
In a bowl, add minced garlic, red bird chilies, green onion, crushed peanuts, hot oil, peppercorn chili oil, light soy sauce, oyster sauce, sesame oil, vinegar, cilantro and salt. Mix well.

Step 4
Drizzle over the chicken leg. Ready to serve.
