Step 1
Slice the ginger

Step 2
In a large pot, bring the water to boil, add ginger and salt

Place the chicken in the water and add the dark soy sauce

Step 4
Bring the water back to boil in a high heat for 8 minutes, then turn off the heat and let the chicken sit for another 20 minutes

Take the chicken off the water and let it rest for 5 minutes

In a chopping board, chop the cane sugar into small pieces

In a wok, place the aluminum foil on the bottom and a rack, then place the rice, cane sugar and dry rose

Cool the chicken for 15 minutes and cut the chicken in half and place it flat skin up on the rack

Cover the wok and cook on a high heat until the smoke come out from the side and count for 3 minutes then turn off the heat for another 5 minutes

Let it rest for another 20 minutes and cut into pieces
