Roasted Salmon and Vegetables Quinoa Salad

Step by Step Instructions

Step 1
Preheat oven to 200℃. Cover 2 baking trays with foil. Place salmon fillet, cherry tomatoes and asparagus onto the trays. Drizzle olive oil over and season with salt and black pepper.

Step 2
Roast in oven for 8-10 minutes or until salmon is cooked through. Set aside.

Step 3
Put quinoa and water or chicken broth in a pot. Season with salt.

Step 4
Cover and cook over medium heat until water is absorbed and quinoa is soft. Roughly 12-15 minutes.

Step 5
Turn off heat. Use a fork to fluff up the quinoa. Spoon into a bowl and let cool slightly.

Step 6
For the dressing: mix all ingredients together in a bowl. Set aside.

Step 7
Chop the asparagus, add to the quinoa and mix well. Transfer onto a plate.

Step 8
Place the arugula, salmon and cherry tomatoes on top.

Step 9
Drizzle the dressing over.

Ready to serve
