Roasted Red Mullet with Saffron and Mint

Step by Step Instructions

Step 1
Preheat oven to 220°C. Mix together olive oil, white wine and saffron.

Step 2
Cover a shallow ovenproof dish with foil, place cleaned red mullet on top and pour over the marinade.

Step 3
Sprinkle with chopped mint leaves.

Step 4
Season with salt and black pepper and marinate up to an hour. (But if you don’t have the time, you don’t have to).

Step 5
Roast the red mullet in the preheated oven. It will take about 12-14 minutes, but it depends on how big your fish is. Half way through roasting, use a spoon to drizzle some of the marinade onto the fish.

Step 6
Wash new potatoes and put into pot with salt water and cook until tender, about 8-10 minutes. Put the cooked potatoes onto a plate, slightly crushing them with a spoon so the potatoes crack open. Drizzle with the sauce on top.

Step 7
Place the cooked red mullet on top of the potatoes.

Ready to serve
