Roasted Pumpkin Prosciutto Crostini

Step by Step Instructions

Step 1
Peel and dice the pumpkin into small cubes.

Step 2
In a bowl, mix together the pumpkin, olive oil, salt and black pepper.

Step 3
Spread the pumpkin on baking tray evenly and roast for 20 mins at 220C until tender.

Step 4
Smash the pumpkin into puree using the back of a fork. Add ricotta and chilli powder and mix until well combine.

Step 5
Slice the baguette into thick slices, brush on some olive oil and toast it at 220C oven for 10 minutes until golden and crispy.

Step 6
Lay a few pieces of arugula, spread on some pumpkin puree and top with the prosciutto. Enjoy!
