Step 1
In a boiling water, blanch the pigeon for 3 minutes

Step 2
place in an ice bath

Step 3
In another pot, add water and Chinese marinade sauce, add the pigeon

Step 4
cover the lid then cook for 12 minutes, then turn off the heat and let it rest for 2 hours

Step 5
Place the pigeon on the baking sheet pan, combine the honey, lemon juice and dark soy sauce and brush the mixture over the pigeon

Step 6
Preheat the oven at 180C and cook for 20 minutes or until the skin get crispy
