Step 1
Peel and cut the onion into small diced

Step 2
Cut the butter into small cubes

Step 3
Remove the kernel from the cob and place in the baking tray. Save the cob for later use

Step 4
Sprinkle 1/3 of the butter over the kernel corn and place in the over

Step 5
Roast for 30-45 minutes until the corn is slightly golden brown. Stir it occasionally so the corn will roast evenly

Step 6
In a pot, add remaining butter on a medium heat. Sauté the onion until fragrant

Step 7
Add the roasted corn and stir

Step 8
Deglaze with white wine, chicken broth and water. Add the corn cob and cook it for 30 minutes

Remove the cob

Step 10
Use the blender to blend the soup until smooth

Step 11
Add the whipping cream, stir well. Season with salt and black pepper

Ready to serve
