Roasted Bell Pepper Salad with Feta Cheese

Chinese style to cook the bell pepper which is either stir fry or stuff. The sweetness of the bell pepper is also great to make it as a salad. Goes with the balsamic vinegar and make it even healthier.

Step by Step Instructions

Step 1
Peel and slice the red onion

Step 2
Cut the cherry tomato in haves

Step 3
Place the bell pepper on a baking pan, drizzle with some olive oil and roast until wilted and the sides are blackened about 30-35 minutes

Step 4
Place the pepper in the large bowl immediately

Step 5
Cover with plastic wrap for 20 minutes

Step 6
Peel and discard the charred skin. Remove the stem and the seed. Cut them into slice

Step 7
Slowly add the olive oil in a stream and whisk until the dressing emulsified. Seasoning with salt and pepper

Step 8
In a large mixing bowl, combine the bell pepper, red onion, arugula, black olive, pine nut and cherry tomato

Step 9
Drizzle the dressing and toss to coat

Step 10
Sprinkle with feta cheese and refrigerate for 2 hours before serve
