Rice Noodles with Tomato and Beef Brisket

Step 1
Blanch the tomato in a pot of boiling water. Peel, remove the stem and cut into pieces. Peel the potato and cut into pieces. Set aside.

Step 2
Cut the beef brisket and blanch in a pot of boiling water. Set aside.

Step 3
Sauté the green onion and ginger until fragrant. Add onion, tomato and stir well.

Step 4
Add beef brisket, potato, light soy sauce, tomato paste, rock sugar and salt. Add boiling water and stir well. Cover with lid and cook for 1-2 hours.

Step 5
Remove the lid. Add rice noodles and cook for 3 minutes. Season with ground white pepper. Sprinkle with green onion and cilantro. Ready to serve.
