Red Fermented Bean Curd Pork’s knuckle

Step 1
Cut ginger in slices

Step 2
chop garlic

Step 3
Mix garlic, red bean curd, 2 tbsp. of water into paste

Step 4
Add pork’s knuckles in hot water and blanch for 3 minutes and reserve

Step 5
In a soup pot with medium heat, add 1 tbsp of oil and sauté ginger and red bean paste mixture

Step 6
Add in pork’s knuckle and mix well

Step 7
Add anise, rock sugar, peanuts, light soy, dark soy, rice wine with 500ml of water

Step 8
Cook with high heat for 10 minutes and reduce heat and cook for another one hour until pork knuckle is tender
