Rack of Lamb with Red Wine Sauce

Step 1
Trim the excess fat of the lamb, season with salt and pepper

Remove the herbs form the stem, chopped and mix together

In a pan, add oil on a medium high heat. Sear the lamb until golden brown on both sides

Transfer to the baking tray, rub the lam with mixed herbs and spread Dijon mustard

Coated the lamb with breadcrumbs

Preheat the oven at 180ºC and bake it for 30 minutes

In a sauce pan, add oil on a medium high heat. Sauté the shallot until translucent

Add the red wine to deglaze

Add the beef stock reduce by half. Then add the chopped herbs season with salt and pepper

Add the cold butter to thicken the sauce

Cut off the lamb between bones

Drizzle the sauce over the rack of lamb and serve
