Quinoa Salad with Mango and Tiger Prawn

There are many different ways to cook quinoa. You may mix them with fruits and seafood to cook a salad. This tiger prawn salad is ideal for a hot summer!

Step 1
Dice the mango, pineapple, Japanese cucumber and red bell pepper. Shell, devein, rinse and pat the tiger prawns dry.

Step 2
Season the tiger prawns with salt and black pepper.

Step 3
Bring white quinoa and a pot of water to boil on medium heat.

Step 4
Cover the lid, reduce to medium low heat and cook for 12-15 minutes. Remove from heat and let cool.

Step 5
In a pan, add some oil on medium heat. Sear the tiger prawns until golden brown on both sides.

Step 6
Mix together white quinoa, mango, pineapple, Japanese cucumber, red bell pepper, honey, lemon juice and olive oil. Transfer to a plate.

Step 7
Place the tiger prawns on it. Ready to serve.
