Quail eggs siu mai is a classic dim sum, however we don’t usually see it in Hong Kong restaurant any more. Now we are going to teach you to make this in 4 steps. Ready?

Step 1
Bring a pot of water to boil. Cook the quail eggs and remove the shell.

Step 2
Mix the minced pork, shrimp paste, light soy sauce, salt, sugar, ground white pepper, ginger juice, Chinese cooking wine, egg white, corn starch and sesame oil in one direction until sticky. Refrigerate for 20 minutes.

Step 3
Place a quail egg in the middle of the a white siu mai wrapper. Add the filling and make into siu mai shape.

Step 4
Brush some oil on a plate and place the siu mai upside down. Steam on medium high heat for 15-20 minutes and ready to serve.
