Purple Sweet Potato Tofu Congee

Step by Step Instructions

Step 1
Rinse the rice, add the water and bring it to a boil

Step 2
Reduce the heat to medium and keep stirring. Cook until the rice has broken up.

Step 3
Clean and peel the purple sweet potato. Cut into small pieces

Step 4
Steam until soft

Step 5
Put in blender, and blend to smash. Then add some water and whisk until your own consistency

Step 6
Strain the tofu through a sieve to mash, and set aside

Step 7
Divide the congee into half

Step 8
Strain sweet potato through a sieve for a smoother sweet potato mash. Mix one half of the congee with the mashed sweet potato.

Step 9
Mix the other half congee with the mashed tofu

Step 10
Bring the tofu congee back to the boil

Step 11
Place it into a serving bowl with sweet potato congee and ready to serve
