Purple Sweet Potato Rice Cake with Red Dates

Peel and cut the purple sweet potato into medium sized pieces. Steam over water on high heat for 8 minutes.

Step 4
In a bowl, combine 125g glutinous rice flour with 120mL water. Add 1 tablespoon osmanthus flower syrup.

Mix well with your hands until a soft dough is formed and it is not sticky. Wrap the dough with cling film to prevent it from getting dry. Set side.

In a separate bowl, combine the 125g glutinous rice flour with warm purple sweet potato. Add sugar and mix until the purple sweet potato is mashed. The flour mixture should be purple in color.

Step 7
Add water and knead with your hands to form a soft dough.

Place the purple sweet potato dough between two sheets of cling film.

Step 9
Then flatten to 3-4mm thick with a rolling pin.

Trim and cut into rectangular shapes.

Apply the same rolling technique to the osmanthus flower dough. Also trim and cut into similar size rectangular shapes.

With 2 sheets each of the purple sweet potato dough and osmanthus flower dough. Stack them up alternately.

Brush the top with some water. Sprinkle some red dates on top. Brush with remaining osmanthus flower syrup.

Steam over water on high heat for 8-10 minutes. When ready, allow to cool for 20 minutes.

Cut the rice cake in half.

Flip one side over and then stack in them on top of each other.
