Pumpkin Salmon Miso Soup

Step by Step Instructions

Step 1
Rinse the pumpkin. Remove the seed and cut into chunks.

Step 2
Rinse the salmon and cut into pieces.

Step 3
Soak kombu in water for 30 minutes.

Step 4
In a soup pot, add 1 tsp of oil and pan-sear the salmon over medium heat. Transfer to plate and set aside.

Step 5
With the same pot, sauté ginger slices until fragrant. Add pumpkin and stir fry a little.

Step 6
Pour 1L water into the pot, add kombu and cook for 15 minutes with the lid on.

Step 7
Return salmon into the pot. In a small bowl, mix miso with 2 tbsp of water, stir into the pot and cook for another 10 minutes. Enjoy!
