Pumpkin Pancake

Ingredients

Step by Step Instructions

Step 1
Peel the pumpkin, shred 1/3 and set aside.

Step 2
Cut the remaining pumpkin into pieces. Steam for 15 minutes until soft. Smash into puree.

Step 3
Sauté the pumpkin seeds without adding oil until fragrant and set aside.

Step 4
Mix together the pumpkin puree, corn starch and flour. Stir and add some water to make batter. Add pumpkin seeds and shredded pumpkin.

Step 5
According to your own preference, add sugar or salt to make sweet or salty pancakes.

Step 6
In a pan, add some oil. Pour a scoop of batter over, with 20cm wide and 1cm thick.

Step 7
Sear on low heat until both sides are golden brown. Ready to serve.
