Pumpkin Mochi
Recipe Details
We can make bright and cute mochi without using any artificial colouring, but pumpkins. Stuffed with butternut squash puree, this is a very healthy and easy dessert.

Step by Step Instructions

Step 1
Peel, seed and dice the butternut squash Steam until soft, mash and set aside.

Step 2
Prepare the fillings. In a pan, melt the butter on medium heat. Add 200g butternut squash puree, condensed milk, 20g sugar and ground cinnamon. Stir fry for 30 minutes or until thicken and let cool. Form into balls with 2cm diameter.

Step 3
In a mixing bowl, add the remaining butternut squash and sugar. Add the glutinous rice flour bit by bit (adjust according to the liquid volume on the puree). Knead the dough until smooth and not sticky.

Step 4
Divide into balls. Stuff with butternut squash fillings.

Step 5
Slightly press the balls. Use a toothpick to press some lines outside to make pumpkin shape. Top with dried raisins as pumpkin stem.

Step 6
Cover the steaming tray with baking paper and place mochi on it. Steam for 7 minutes or until cooked. Ready to serve.
