Pork and Enoki Wrap with Pan Seared Pumpkin

Beef and enoki mushroom is a well-known perfect match. Enoki mushroom also tastes excellent with pork. With seared pumpkin, the lunchbox is just too tempting.

Step 1
Slice the pumpkin.

Step 2
Clean and trim the enoki mushrooms.

Step 3
Place a small bunch of enoki mushroom on the pork slice and wrap into a roll. Season with salt and black pepper.

Step 4
In a pan, add some oil on a medium high heat. Sear the pumpkin until golden brown on both sides and set aside.

Step 5
In the same pan, sear the pork roll and rotate until golden brown.

Step 6
Brush the teriyaki sauce over the pork and cook until the pork is fully cooked.

Step 7
Ready to serve.
