Pickled Watermelon Rind with Fermented Soybean

Step 1
Remove the watermelon flesh

Peel off the skin and cut the rinds in pieces

Step 3
Mix the watermelon rind with coarse salt for 2 hours until soft

Step 4
Place a heavy weight over to let the liquid release

Rinse off the coarse salt

Step 6
Pat dry with kitchen paper

Mince the garlic. Remove the seed and chop the red bird chili

Add the white vinegar, sugar and stir until the sugar is dissolved. Add the fermented soybean and mix well

Mix together the watermelon rind to the sauce

Refrigerate for at least 4 hours
