Papaya with Ginger Milk Pudding

Step 1
Rinse papaya, remove the seeds and half of the flesh.

Step 2
Add sugar into skim milk, and heat over the stove.

Step 3
Heat until it is just hot with small bubbles on the side, turn off the heat.

Step 4
Stir milk until temperature drops to 80°C.

Step 5
Add ginger juice into the papaya and quickly pour in milk.

Step 6
Let it cool for 1 minute, add papaya flesh and let it set until milk is set into pudding.

Tips: 1. Papaya is rich in Carotene. It also has antioxidant which has a positive effect to your skin. 2. Some people might think skim milk is difficult to coagulate, however it is wrong because ginger juice is mainly used to coagulate the proteins in milk but not fat.
