Step 1
Peel, seed and cut the papaya into pieces. Soak the white fungus until soft and remove the stems. Rinse and halve the monk fruits. Soak and rinse the dried figs.

Step 2
Bring a pot of water to boil. Add pork shank, blanch for 5 minutes and drain.

Step 3
In a pot, add papaya, white fungus, monk fruits, pork shank, figs and water. Bring to boil on medium heat.

Step 4
Reduce to medium low heat. Cover the lid and cook for 1.5 hour.

Step 5
Remove the lid and season with salt. Ready to serve.
