Step 1
Prepare the pandan juice. Cut the pandan leaves into small pieces, place them in the blender

Add 2 tbsp of water

Blend until smooth

Place the mixture in the fish bag and squeeze out the juice, about 2 tbsp

Prepare the egg yolks batter. Combine the egg yolks and sugar

Whisk until the batter is slightly turn to white color

Add vegetable oil, coconut milk, pandan juice, pandan flavoring respectively

Add the sifted cake flour, baking powder and salt to mix well

Prepare the meringue. In a mixing bowl, whisk the egg white with 1/3 sugar and beat until the sugar is dissolved. Repeat the step another 2 times until all the sugar is added and until the meringue

Add 1/3 of the meringue into the egg yolk batter and slightly fold together. Then add the egg yolk batter back to the meringue and slightly fold together

Pour the batter into the baking mold and slightly tap on the surface area to release the big bubble

Preheat the oven to 175°C and bake it for 40 minutes

Flip it upside down
