Bring a pot of water to boil, add spinach to blanch for 2 minutes

Step 2
Transfer to a bowl of cold water

Drain dry and coarsely chop

Step 4
Dice the bacon

In a mixing bowl, combine spinach, bacon, flour, salt, oil, and egg. Mix them together

In a sauté pan, heat up some oil on medium heat. Add spinach mixture to form the shapes of pancakes

Flip over after 2-3 minutes on each side

Step 8
Cut into wedges and ready to serve
