Pan Seared Quail with Fig Sauce

Step 1
In a large mixing bowl, combine the brine ingredients together and whisk well

Place the quail and let it brine for at least 2 hours

Cut the quail into quarter and remove the bone for the breast

In a pan, add some oil on a medium heat and sear the quail pieces until golden brown

Sprinkle with salt and pepper. Transfer to the baking pan

4. Rinse and cut the potato and tomato in half

Cut the figs in wedges

Finely chop the shallot

In a sauce pan, melt the butter and sauté the shallot and the figs and cook until softened

Add the red wine and reduce by half then add the chicken broth, balsamic glaze and bring it to simmer until the sauce is thicken, season with salt and pepper

Remove from the heat and whisk in the butter

In the pan, add some oil and cook the potato until golden brown until cooked then add the tomato and slightly brown. Sprinkle salt and pepper to season

Place the potatoes with the quail and bake it for 10-12 minutes on 180°C

Pour the sauce with the quail, serve with fresh fig, potato and tomato
