Pan-fried Stuffed Eggplant

Step 1
Dice the green onion and mince the garlic.

Step 2
Marinate the minced pork with light soy sauce, sugar, Chinese cooking wine, sesame oil and corn starch for 15 minutes. Add green onion, ginger, garlic and mix well.

Step 3
Butterfly the eggplant.

Step 4
Stuff the eggplant with pork.

Step 5
Mix together the all-purpose flour and water. Season with some salt.

Step 6
In a pan, add some oil on medium heat. Coat the eggplant with batter and place onto the pan. Sear on high heat until golden brown on both sides.

Step 7
Reduce to medium low heat. Cover the lid and cook until the pork is done. Ready to serve.
