Step 1
Chop the coriander and green onion. Set aside.

Step 2
Wash the pearl oysters with corn starch and rinse. Bring water to boil. Add Chinese cooking wine and blanch the pearl oysters for 20 seconds. Drain and set aside.

Step 3
Beat the duck eggs. Add water and mix well. Add tapioca flour bit by bit and mix well.

Step 4
Add coriander, green onion, pearl oysters, salt and ground white pepper. Mix well.

Step 5
In a pan, add some oil on medium high heat. Add the egg wash and deep fry until golden brown on both sides.

Step 6
Serve with fish sauce.
