Pad Thai(Stir-fried Rice Noodles with Egg and Tofu)

Soak the noodle in warm water until soft

Slice the shallot and tofu

Mince the garlic

Prepare the pad Thai sauce. In a pot, combine palm sugar, fish sauce and tamarind paste

Cook until the sugar is dissolve then set aside

In a pan, add oil on a medium heat. Sauté the garlic and shallot until fragrant

Add the tofu and quick stir

Drain the noodle and add to the pan, keep stirring to prevent stick on to the pan

Add the pad Thai sauce and make sure the sauce is all coated with the noodle

Push the noodle to the side of the pan, crack in the egg and scramble until the egg is cooked

Mix the noodle back, add the bean sprout, red pepper flakes

Sprinkle with roasted peanut, cilantro and ready to serve. Squeeze the lime juice before serve
