Oysters and Salmon Quinoa Rice in Soup

Step 1
Dice the salmon fillet. Rinse the oyster with corn starch and water for 2-3 times until no longer slimy.

Step 2
In a pot, add in jasmine rice, quinoa and water. Season with a bit of salt. Bring to a boil over medium high heat, then lower the heat, cover and cook until rice and quinoa is done, about 15-20 minutes. You can also do this in a rice cooker.

Step 3
To make the soup base, add in bonito powder, water and ginger slices into a pot. Season with salt and white pepper and bring to a boil over medium high heat.

Step 4
Turn heat to medium and put in salmon fillet and pearl oyster to poach until cooked through.

Step 5
Spoon in quinoa rice into a bowl. Add in soup with salmon and oysters. Top with green onion and nori.
