Oolong Tea Braised Dongpo Pork

Braise the pork belly on a medium low heat and the texture will be perfectly soft. The fat just melts in your mouth in few seconds with a light flavor of tea.

Step 1
Tie the pork belly with cotton strings and cut the green onions into sections.

Step 2
Bring a pot of water to boil. Add 4 slices ginger and pork belly. Blanch for 5 minutes and drain.

Step 3
In a pan, add some oil on medium heat. Add the pork belly and sear until fragrant. Transfer to a plate and set aside.

Step 4
Heat another pan on a medium heat. Add rock sugar and cook on medium low heat until melted.

Step 5
Add pork belly, green onions, Chinese cooking wine, remaining ginger, premium soy sauce, oolong tea bags and water. Bring to boil on medium heat.

Step 6
Cover with lid, reduce to medium low heat and cook for 1 hour.

Step 7
Open the lid, flip the pork belly over and cover the lid again. Cook for 1 hour. Ready to serve.
