Octopus with Potatoes in Spanish Style

Paprika is one of the common seasoning in Spanish food, adding reddish colour to dishes naturally. The crispy potatoes and seasoned octopus with paprika and lemon juice gives an authentic Spanish flavour.

Step 1
Chop onion and garlic. Set aside.

Step 2
In a pot, bring water to boil and blanch the small octopus.

Step 3
Cook the potatoes for 10 minutes or until slightly soft. Drain and let cool.

Step 4
Dice the potatoes. In a pan, add some olive oil. Sear the potatoes on a medium heat until golden brown. Transfer to a plate.

Step 5
Add garlic and onion. Sauté until fragrant.

Step 6
Add octopus, potatoes, cayenne pepper powder, lemon juice and thyme. Mix well.

Step 7
Season with salt and black pepper and sprinkle with parsley. Ready to serve.
