Shallots2 pc
Champaign300 ml
Sea salt and black pepper
Fresh basil
Butter2 tbsp

Mince the shallot

Step 2
Mince the garlic

Step 3
Heat up a pan, sauté the pancetta until fragrant

Step 4
Add the minced shallot and minced garlic

Step 5
Add the mussels, quick stir then add the Champaign

Step 6
Cover the lid until the mussel is open

Step 7
Chiffon the fresh basil

Step 8
Season with sea salt and black pepper. Add the basil and butter to make it creamier. Ready to serve
