No Oil Pan Fried Chicken

Step 1
Rinse and drain the chicken thighs. Score on the surface. Dice the green part of green onion.

Step 2
Mix the chicken thighs with Chinese cooking wine, salt and black pepper. Marinate for 15 minutes.

Step 3
Heat the pan without oil and sear the chicken thighs with the skin facing down on medium heat for 6 minutes until the skin is golden brown.

Step 4
Flip over and sear for another 6 minutes until done.

Step 5
Slice and transfer to a plate. Sprinkle with diced green onion and drizzle the chicken oil over. Ready to sever.
