No Carb Chilled Zucchini Pasta with Fresh tomato sauce

Step by Step Instructions

Step 1
Wash zucchini and peel zucchini into thin slices, then cut into thin strip for noodle

Step 2
In the pot, bring the water to boil over medium high heat, add salt and cook until the zucchini noodles are tender but not falling apart about 2-3 minutes

Step 3
transfer to the ice bath to cool and drain off the water

Step 4
Prick the tomatoes with the tip of a knife

Step 5
place in the pot of boiling water for about 1 minute until the skin is start to split

Step 6
Remove the tomatoes off the water and transfer to the ice bath and peeled off the skin

Step 7
cut the tomatoes in wedges and remove the seeds

Step 8
Transfer the tomatoes to the blender and add the garlic, basil, olive oil, salt and pepper

Step 9
Blend the ingredients until smooth and place in the fridge to chill for 20-30 minutes

Step 10
Place the zucchini on the serving plate and add the sauce
