Mushroom and Tofu Miso Soup

Step 1
Remove the stems of all mushrooms and slice the shiitake mushrooms. Dice the soft tofu, green onion and set aside.

Step 2
Mix miso and some water well and set aside.

Step 3
Bring 700mL water and bonito stock to boil on medium heat.

Step 4
Add shiitake mushrooms, enoki mushrooms, soft tofu and cook for 5 minutes.

Step 5
Add miso and cook for 2 minutes. Remove from heat. Add green onion and ready to serve.
