Miso Honey Sweet Potato Salad with Green Dressing

Green Dressing
Step by Step Instructions

Step 1
Preheat oven to 200°C. Mix together white miso, honey, rice vinegar and olive oil together. Season with salt and black pepper.

Step 2
Spread the chopped sweet potatoes and onions onto a baking sheet and mix in 3/4 of the dressing with the vegetables. Make sure everything is well coated.

Step 3
Bake for 20-30 minutes until cooked through. Remove vegetables from oven. Taste and if needed, brush a bit more of the dressing onto the sweet potatoes.

Step 4
In blender, add all the ingredients of the green dressing and blend until smooth.

Step 5
Place the sweet potatoes, red onion and arugula onto serving plates.

Step 6
Sprinkle with sesame seeds and drizzle over Green dressing.

Step 7
Serve warm or at room temperature.
