Melon, Conch, Fish Maw and Chicken Feet Soup

Step 1
Seed, peel and cut the honeydew melon into pieces. Soak and rinse the dried conch meat, dried scallops, dried figs, radix and Yu Zhu. Soak the dried orange peel and scrape off seed pouch and set aside.

Step 2
Bring some water to boil. Add dried conch meat, ginger and rice wine. Blanch the dried conch meat for 5 minutes. Drain and set aside.

Step 3
Bring another pot of water to boil. Add chicken feet, lean pork and blanch for 4 minutes. Drain and set aside.

Step 4
In a pot, add dried conch meat, chicken feet, lean pork, honeydew melon, fish maw, dried scallops, dried figs, Yu Zhu, radix, dried orange peel and water. Bring them to boil on medium heat.

Step 5
Cover the lid, reduce to medium low heat and cook for 2 hours.

Step 6
Remove the lid. Season with some salt and ready to serve.
