Step 1
Dough: Mix and knead all ingredients.

Roll into ball and cover with wet towel or plastic wrap for 20 minutes.

Pastry: Mix all ingredients.

Step 4
Roll into ball and cover with wet towel or plastic wrap for 20 minutes.

Step 5
Chop the pork into pieces.

Step 6
Place into a blender.

Step 7
Blend roughly or you may chop with knife. Don’t chop it too fine.

Mix all stuffing ingredients and refrigerate.

Prepare mooncake crust: Divide the dough and pastry into small portions, 14g and 19g respectively. Roll into balls and cover with wet towel.

Flatten a dough ball, place a pastry ball in the middle and wrap.

Step 11
Flatten into a long shape.

Step 12
Roll from bottom to top.

Step 13
Cover with wet towel.

Step 14
Flatten with the opening on top.

Step 15
Roll from bottom to top again.

Step 16
Halve and roll into balls.

Step 17
Flatten into dumpling sheet like, with centre thicken and edge thinner.

Step 18
Place a 20g pork in the middle and wrap.

Step 19
Roll into balls and place on a baking tray with opening on bottom. Bake on 180℃ for 20 minutes.
